Red Cabbage Rolls



Red Cabbage Rolls (3 servings)

In medium pot, bring water to a boil and put in:

3 large red cabbage leaves,
10 or so cauliflower trees,
tbsp minced garlic,
pinch of salt

blanche cabbage leaves until firm but rollable (use extreme intuition - about 5 minutes in water)
in separate pot boil:

1/4 C brown rice

cook rest of vegetable mixture (sans cabbage) about 15 more minutes.
meanwhile, saute:

1 tbsp minced garlic,
1/2 C red bell pepper, diced.

drain water into separate pot (now you have a yummy broth) and put whole veggies in a food processor.
fill cabbage leaves with:

saute mixture,
brown rice,
processed cauliflower goodness

roll so that the seam is on the belly
drizzle with olive oil, sprinkle with thyme and black pepper (or whatever)
bake at 350 degrees for approximately 30 minutes (or roughly the time it takes to drink a glass of wine)
